Carrot Cake

What You Need
1 cup brown sugar
1 cup olive oil
3 eggs
1/2 tsp. vanilla
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 1/2 tsp. baking powder
2 cups grated carrots
1 1/3 cups all-purpose flour

Make It
PREHEAT the oven to 350°F. Grease 9" X 13" pan.

COMBINE sugar and oil in a mixing bowl. Beat in eggs, one at a time. Add next 4 ingredients. Stir in the carrots. Mix in the flour. Spoon the mixture into the prepared pan.

BAKE for approximately 35 minutes or until inserted toothpick comes out clean.
