Green Mango Salad

What You Need
1/3 cup (75 mL) chopped cashews or peanuts
2 unripe mangoes, 2 lb/1 kg total
1/3 cup (75 mL) chopped fresh coriander
1/3 cup (75 mL) chopped mint
2 tbsp (30 mL) lime juice
4 tsp (18 mL) granulated sugar
4 tsp (18 mL) fish sauce
1 tbsp (15 mL) vegetable oil
1/4 tsp (1 mL) Asian chili sauce or hot pepper sauce
1 sweet red pepper, thinly sliced
1 cup (250 mL) thinly sliced red onions

Make It
1) In skillet or toaster oven, TOAST cashews over medium heat until fragrant and golden, about 8 minutes; set aside.

2) CUT pointy ends off mangoes. SET each mango on cut end. Using serrated knife, CUT off peel. CUT flesh on either side of flat pit into thin slices; STACK and CUT into thin strips.

3) In bowl, WHISK together coriander, mint, lime juice, sugar, fish sauce, oil and chili sauce. ADD mangoes, red pepper and onion; toss to coat. (Make-ahead: Cover and refrigerate for up to 2 days.) SPRINKLE with cashews.

My Comments
Thank you to my friend Alice for sharing the recipe. I invited friends over at my place for dinner after work. This recipe is simple and ideal for a limited preparation time. I used peanuts instead of cashews and Sriracha sauce as chili sauce. I really like the taste of the salad dressing. I guess this is one of my favorite salads.

2013 - Igloofest, Montreal


Every winter, Igloofest gathers thousands of eletronic music lovers to dance under the stars at the Quays of the Old Port of Montreal. This event occurs during 4 week-ends (Fri-Sat-Sun) from mid-January to beginning February starting at 7pm and ending at midnight. Make sure you dress up warmly, wear your snow pant!

2013 - Las Vegas, NV (II)

2 days following my China trip / 7 months later during the Canadian Thanksgiving long week-end... here I am again Las Vegas. This time is for attending one of my good buddies' wedding.

FRIDAY NIGHT - CHECK-IN

Tonight, I am staying at the Venetian.

One-Foot Long Hot-Dog
At my arrival, my friend and I were hungry. We arrived late night. Located in the Casino Royale, there is the one-foot long hot-dog for $1.99 USD waiting for us.




SATURDAY - 24 HOURS BEFORE WEDDING


Brunch @Wynn Buffet
As I had a brunch at Wynn Buffet last time, I recommended my friends to go.

Atlantis Aquarium
A 50 000-gallon saltwater aquarium with more than 1000 species of ocean life is located in the Forum Shops@Caesars. Free admission.

Blue Man Group 

Following dinner, we watched a Blue Man Group's show at Monte Carlo. It is a "an energetic and innovative combination of music, comedy, and multimedia theatrics." as described on their website.




Palazzo
This trip, I stayed at 2 hotels. I really enjoyed my stay at both hotels. I prefer the Venetian and Palazzo than Mirage.


SUNDAY - WEDDING

Fast & Sweet Wedding
A limo picked us up at the Venetian. The wedding was held in Tahiti Village. It was the fastest and simplest wedding I have ever attended. What counts is love and happiness of the couple. The guests applaused too. My blessings to both of you!




Welcome to Fabulous Las Vegas Sign
Following the wedding ceremony, the limo driver drove us to the fabulous sign, located one mile south of Mandalay Bay on the Strip. Designed by Betty Willis in 1959, this iconic sign is on the National Register of Historic Places. Free admission.


Grand Lux Cafe
Located at the Grand Canal Shoppes (The Venetian and the Palazzo), we had dinner at the Grand Lux Cafe.





Serendipity 3 @Caesars Palace
I finally had the signature frozen hot chocolate.


Marquee@Cosmopolitan
This is the best club I have ever been. My friends and I got in for free. This 60 000 square-foot clubber's nirvana features 7 bars, 2 dance floors, a 40-foot-long LED DJ booth and a projection stage surrounded by coliseum-style seating.
